Back at @carowindspark for Winterfest Monday-Saturday each night from 5pm-10pm! The decorations throughout park are amazing but I've consulted with Rainbow Unicorn and our fave is definitely the festive T-Rex. ☃️
Pulpo al ajillo is my new favorite way of eating octopus. Sauteed in a garlic and guajillo chile oil 'con todo' (i.e with limes, tortillas, cilantro slaw, rice and charred habañero and xcatic chile salsa). The xcatic chiles are so unbelievably good...look out for xcatic salsa next summer with Juma, we'll be trying to grow some of these Mayan delicacies for sure!
