BSx107 • This is a brew story. The brew depicted in this photo took place in Sydney in 2017. Research has revealed that Shakespeare loved Syphon coffee. We're not sure if it was the full-bodied clean flavours or just the novelty of the method. As proof, scholars point to Macbeth Act IV, Scene I, where the witches chant "Double, double toil and trouble; fire burn and Hario Syphon bubble." Truly.

Former dancer Phil Pavlou snapped up the chance to open his own coffee bar when the need presented itself outside his workshop, Urban Attitude. Similar to dancing, making coffee is a Fine Art that demands thorough knowledge of theory and techniques to perform key roles, and Phil has mastered the art.
When he’s not attending to his client’s fitness goals, you’ll find Phil slinging shots behind the striking 2 group Synesso MVP at Little Alchemy, a converted 8ft container. It’s a stone’s throw from Brunswick train station, and quaintly positioned in the forecourt of the Wilkinson Street Gym.
The alchemy of transforming ground coffee into liquid gold is conducted daily, with beans sourced from 5 Senses. The Hi Fidelity blend is used for milk based espresso, and marries sweetness of the Colombian Popayan Cincuenta, smoothness of the Colombian El Recuerdo, and floral highlights of an Ethiopian Yirgacheffe. Black coffee is made using single origin offerings, and the Yirgzero is currently in the hopper. This washed Ethiopian is characterised by floral and citrus notes.
The side ledge is stocked with pastries from Candied Bakery, and chocolate cookie sandwiches from Butterbing.
Whether you’re passing through for a takeaway on the go, or having a breather after a gym session, you can get your caffeinated elixir at 28 Wilkinson Street, Brunswick.
